Dessert Spotlight: The Limber
The island of Puerto Rico is home to many homegrown desserts including the always popular Flan de Coco and many others.
However, my favorite treat contains fresh fruit and is always cold and delicious.
You can keep your Golden Ticket, all I need to fulfill my dessert desires is a ticket to Puerto Rico – home of a frozen treat called the Limber. Pronounce it as ‘lim-bay’ to save yourself any unnecessary cultural embarrassment, and prepare yourself for a new addiction.
The Limber is a frozen dessert which combines fresh fruit, juice and frequently a bit of carnation milk. Unlike many frozen Italian ices common in the States, even the best, the Limber is pretty much all natural and often has chunks of fresh fruits like Pineapple and coconut.
The first few moments after getting your Limber will see you scraping your plastic spoon furiously across the frozen top. Unless, of course, you have the patience to wait a few months for it to thaw. But I’ve never been that guy.
But once you begin to get past the icey top, your taste buds will tingle with delight as the natural sweetness and unadulterated fruit mingle in your palette. Beware, you may be tempted to quickly devour this delicacy. And the result will be your old friend, brain-freeze
